Its color is reminiscent of a chestnut purée with small darker fragments. Its aroma is clearly dominated by its two outstanding ingredients, aubergine and oregano, with the onion providing only texture and flavour. It is a fairly fluid pâté, between thick whipped cream and softened butter. When savoring it, we clearly perceive the roasted aubergine, with its characteristic spicy point, and the rest of the ingredients appear naturally. Finally, the oregano takes center stage due to the effect of its aroma again.
